Rhubarb with Ginger & Star Anise

Stewed rhubarb is one of my absolute favourite things and it goes really well with star anise and ginger. You can use it in all sorts of desserts (it makes a particularly awesome crumble) but I like it best with some Greek yoghurt and maybe a little bit of toasted muesli.

Ingredients (makes about 2 cups):
1 bunch rhubarb, sliced into 2cm pieces
1/4 cup sugar
Juice and rind of 1 lemon
1/2 cup water
2cm piece of ginger, finely sliced
3 star anise

Method:

  • Place all ingredients in a medium sized saucepan over low heat
  • Simmer over low heat for 10-15 minutes until rhubarb is very soft. Remove star anise
  • Serve with Greek yoghurt and sprinkle over some toasted muesli if you like
