Stewed rhubarb is one of my absolute favourite things and it goes really well with star anise and ginger. You can use it in all sorts of desserts (it makes a particularly awesome crumble) but I like it best with some Greek yoghurt and maybe a little bit of toasted muesli.
Ingredients (makes about 2 cups):
1 bunch rhubarb, sliced into 2cm pieces
1/4 cup sugar
Juice and rind of 1 lemon
1/2 cup water
2cm piece of ginger, finely sliced
3 star anise
Method:
- Place all ingredients in a medium sized saucepan over low heat
- Simmer over low heat for 10-15 minutes until rhubarb is very soft. Remove star anise
- Serve with Greek yoghurt and sprinkle over some toasted muesli if you like
