Watermelon, Feta & Basil Salad

watermelon feta and basil salad shift nutrition Ingredients (serves 6):
1/4 watermelon
1/2 small punnet cherry tomatoes, halved
1/4 red onion, finely sliced
1/4 cup pomegranate seeds (optional)
100g feta, crumbled or cut into 2 cm cubes
1 small red or green chilli, seeds removed and finely sliced
2 tablespoons balsamic glaze
1 large handful basil leaves

Method: 

  • Cut watermelon into 2cm thick slices. Cut skin off each slice and then slice into thirds, making three small triangles from each slice
  • Arrange watermelon triangles on a serving plate. Top with cherry tomatoes, onion, pomegranate, feta and chilli
  • Drizzle over balsamic glaze, top with basil leaves and serve
