These muffins are the perfect start to Christmas day – they’re full of cranberries, pistachios, orange zest and spices, so they smell and taste amazing and with the addition of muesli, they’re also a healthier alternative to your usual muffin. Plus they can be made up the night before so all you have to do in the morning is pop them in the oven!
Ingredients (makes about 8 large muffins)
1 1/2 cups natural muesli (or rolled oats)
1/2 cup mixed dried fruit such as cranberries, goji berries and raisins
1 teaspoon mixed spice
1/2 cup toasted pistachio nuts, roughly chopped
Zest of 1 orange
1 1/2 cups wholemeal self-raising flour
1/2 cup caster sugar
1 1/2 cups milk
1 egg, lightly beaten
1/2 cup vegetable oil
Method:
- Combine muesli, dried fruit, mixed spice, nuts, orange zest, flour and sugar in a bowl. Make a well in the centre. Add milk, egg and oil and stir until just combined (don’t overmix or the muffins will be chewy).
- Cover and refrigerate overnight (optional).
- Preheat oven to 180°C and grease a large 12-hole muffin tin. Remove mixture from fridge and stand for 10 minutes.
- Spoon mixture into muffin tins, filling each to 2/3 full. Bake for 20 to 25 minutes or until browned and cooked through. Stand in tin for 5 minutes, then transfer to a wire rack.
- Serve warm
