Want to know how to get a super healthy dinner on the table in under 20 minutes?
My 16 Minute Salmon is one of my favourite quick and easy recipes which just happens to be one of the healthiest meals going around too. Plus it’s all cooked in paper so there’s barely any washing up to do!
Ingredients (for 2 serves):
2 salmon fillets
1 zucchini, thinly sliced
1/4 capsicum, thinly sliced
1/2 cup tinned chickpeas, drained
1/4 cup pitted black olives
2 lemon wedges
2 teaspoons olive oil
Salt and pepper
1 tablespoon parsley, chopped
- Lay zucchini slices on a sheet of baking paper, top with the capsicum, chickpeas, olives, lemon and finally the salmon. Season with salt and pepper and drizzle over the olive oil.
- Wrap up in paper and bake at 180°C for around 15 minutes or until salmon is just cooked through.
- Top with parsley and serve on it’s own or with steamed rice or some crusty bread
