Christmas should be a time for a little indulgence, but indulgences don’t necessarily have to be bad for you! These truffles are full of oats, nuts and dried fruit and taste so good you’d never know they were healthy. They’re very quick and easy to whip up and make a great gift and a nice change from mince pies and shortbread.
Almonds can be used instead of the cashews if you prefer, or even some pistachio nuts for a full Christmas colour scheme.
Ingredients (makes about 20):
1 cup rolled oats
1 cup cashews
1 cup cranberries (low sugar if you can find them)
2/3 cup desiccated coconut
1/2 cup skim milk powder
3 tablespoons water
1/2 cup dessicated coconut, extra
Method:
- Place oats, cashews, cranberries and coconut into a food processor and process until fine
- Add skim milk powder and water and process until mixture comes together in a ball (add a little more water if you need to)
- Spread extra coconut over a large plate. Roll mixture into balls, then roll in coconut
- Refrigerate for 15-20 minutes or until firm
